Cauliflower casserole
INGREDIENTS:
2 heads cauliflower, cut into florets
5 eggs
1 ½ cups heavy cream
1 1/2 teaspoons salt
½ teaspoon pepper
1 teaspoon garlic powder
1 teaspoon onion powder
4 tablespoons butter, melted
2 cups shredded white cheddar  cheese
1/2 cup grated parmesan cheese
½ cup shredded mozzarella cheese
Additional ½ cup grated parmesan for topping
DIRECTIONS:
Preheat oven to 350 degrees F and grease a 9×13 baking dish.
Bring a large pot of water to a boil and cook the cauliflower just until tender, about 3-4 minutes.
Drain the cauliflower to eliminate as much moisture as possible, then transfer cauliflower to the prepared baking dish.
In a medium bowl, beat together the eggs, heavy cream, seasonings, and cheese. Mix in the melted butter …

Pour cheese mixture over the cauliflower and top with the remaining ½ cup parmesan.
Bake for 35-40 minutes or until top begins to brown.
Serve warm.
I love this because it has no meat in it. It's nice now and then.

20. Are you a fan of mayonnaise in a sandwich (either egg-based or vegan)?

I don't like mayo at all. I use cream cheese for sandwiches. I love sandwiches like that. This one was short and sweet. I think I'll post another recipe tonight. Do you all prefer dinner or dessert recipes?

1. What distracts you from what’s truly important each day?

I can't think of anything that is truly important daily. Like today it's our anniversary, so we're going out for dinner. I'm not going to get distracted. There's my answer. If it's important, I won't be distracted. I'll see if the next one is better.

2. If you decided right now that you had enough money, and that you would always have enough, what would you do with your life?

We might travel more. Fly first class. It's on my bucket list. I guess my life wouldn't change that much.

Things I'm Good At:

1. I love to cook and I honestly think I'm good at it. I'm also good at baking. My older grandchildren call me and set up weekend visits and stay for dinner. They all have their favorites and ask for that.

2. I'm a great Grandmother. I adore these kids. We raised two of our grandchildren and adopted them. I'm also a good mom. I made some mistakes, believe me. But no one could love them more.

3. Being married. It wasn't always grand, but we hung in there. He is my best friend.

4. My pup loves me. She has separation anxiety, so we take her with us a lot. She's very sweet.

5. I wish I could say my home is spotless, but I can't. But it's always picked up.

Ways I Can Take Care of Myself.

If someone says something I know isn't right, I can nicely say exactly what I think. I won't keep saying the same thing, but at least I got to say how I felt about what was said. Years ago I would have just let it go and kept my mouth shut. But now, I realize that people don't always agree with each other. And people are free to say what they want. Who am I to tell anyone they're wrong? Right? I'm rambling. I know how to use pepper spray, and I know some self-defense. But keep in mind I'm much older since I learned those things. I know all about abusive behavior and would gladly take some measure of action towards someone that is hurting a child or hurting an adult for that matter.

19. Have you ever worn false eyelashes or had eyelash extensions?

Nope, never have. Never will. Boy, tonight is really boring. Not the night, just the questions aren't doing anything for me. It's just one of those nights. I decided I'm going to post a recipe I tried for dessert on hubby’s birthday. It was so good.

Recipe for Amish pineapple dump cake.

Pineapple dump cake

Gooey Amish Pineapple Dump Cake
Ingredients: 1 can (20 oz) crushed pineapple with juice; 1 box yellow cake mix; 1/2 cup unsalted butter, melted; 1 cup of b town sugar, optional whipped cream or vanilla ice cream for serving.
Instructions: Preheat oven to 350°F (180°C). Pour crushed pineapple with its juice evenly into a greased baking dish. Sprinkle the dry cake mix evenly over the pineapple without mixing. Drizzle melted butter evenly over the top, covering as much of the cake mix as possible. Top with a fine layer of brown sugar. Bake for 40–45 minutes until the top is golden and the edges are bubbly. Let cool slightly, then serve warm with whipped cream or ice cream if desired.

This one is so easy. And it's delicious. I don't even care for pineapple and I loved it.

Challenge #13: TALK ABOUT A COMMUNITY SPACE YOU LIKE. It doesn’t need to be your favorite, or the one where you spend the most time (although it certainly can be). Maybe it’s even one that you’ve barely visited. But talk about that space and how it helps support fannish community.

I'm going to actually say Dreamwidth.

As someone who joined online fandom via LiveJournal ages ago and have seen the shifts and changes of the online fandom community over the years, from the fandom migration to other platforms and how things have altered with the presence of social media, I think Dreamwidth has kept up what I once enjoyed about the LJ fandom community. I do use Tumblr for the pretty graphics and visit Reddit every now and then for updates on things, but ultimately when I think about fannish community I think of something that is more interactive, more personable, and less judgmental. And that's what Dreamwidth is for me. It reminds me of the times when online journaling offered something for everyone, fandom related or not, and was a place to express your thoughts and opinions clearly on your own journal and in community discussions, engage in conversations with others. I participate in fannish conversations and challenges, such as [community profile] snowflake_challenge as an obvious example, even going onto different people's journals to talk and squee about fannish interests. It's something that I miss when it comes to the fandom community interaction as a whole, the engagement of just talking with people about things, having back and forth civil discussion in comment threads. Dreamwidth offers that to me in ways that other places cannot.

That's not to say that other fandom places online I visit don't have value and aspects that I enjoy, it's just that I think I feel more comfortable and safer in the controlled environment that Dreamwidth provides. It may be smaller in comparison to what LJ used to be, it's definitely not on the same wavelength as Tumblr and I do wish more people would join/return to DW, although I must admit to liking how quiet it is here compared to the social media reactionary drivel you often see. Plus, it's challenges like this that get me off my ass to actually write and participate, and I like that kind of push. I don't have to do it, but I want to. Because I miss this kind of thing in fandom, y'know?

Unstuffed cabbage rolls.


INGREDIENTS

2 lbs lean ground beef
1 large onion, diced
1 garlic clove, minced
1 small cabbage, chopped. (I use a large cabbage)
1 cup rice
2 (14 1/2 ounce) cans diced tomatoes
1 (8 ounce) cans tomato sauce
1/2 cup water
1 teaspoon ground black pepper
1 teaspoon sea salt

DIRECTIONS
In a large skillet or dutch oven, brown the ground beef and onions. Drain.
Add the garlic and cook an additional minute.
Add remaining ingredients.
Bring to a boil, cover, reduce the heat and simmer about 25 minutes or until the cabbage is tender.

Things I'm Grateful For:

Gosh, this could take all night. 😂 I'll list the first thing I'm grateful for. That would be my father, a chef who taught me to cook and bake every Sunday night from when I was 11 until I was 18. He gave me his first cookbook when I got married and moved out of our home. I still have it, and still use it for many things. Once we got a house we had Sunday dinners at our place, unless we took the meal to my mom and dad's house and cooked it there. My folks were thrilled to have Sundays off. But I had to really learn to make smaller meals for us alone. On Sundays, I made dinner for 11 of us. That's what happens when you have six brothers and a sister, plus your parents.

18. What is your favourite shellfish dish (if you have one)?

I love almost all, but I love lobster and shrimp. I make this wonderful Alfredo sauce that I use for both of these delicious items. I like them cold, hot, diced into a casserole, and any other way anyone cooks it. And this leads me to ask if anyone has a favorite shrimp or lobster recipe. If you do, please share with me. Thank you.

What are you looking forward to this week?

I’m looking forward to having a day off. I’m helping a friend with her mom. Monday through Thursday from 11:30-1:30. So it’s just two hours a day. It’s not the end of the world but I get tired easily. That’s why it’s only two hours a day. And on Friday hubby and I are going out and celebrating. 56 years sounds like forever. And it has been. 😁🌹

17. Chinese New Year begins today, and festivities continue until March 3rd – the year of the Fire Horse. What animal are you born under in Chinese astrology?

I'm a water dragon.
Animal: Dragon
Element: Water
Polarity: Yang
Personality traits: ambitious, intelligent, and energetic. The water tempers the fire in the dragon. I'm supposed to be more calm, and flexible.
Compatibility:dragons are traditionally most compatible with the Rat and monkey, while often clashing with the Dog. My hubby of 56 years is also the Water Dragon. Dang it he's not a rat or a monkey. 😂 we probably won't last. Hahaha.

What’s something you wish others knew about you?

Most people know this but just in case I'll mention it tonight. I write children books. I have four published.

1. The Well-Mannered Giant. This one is a favorite of mine.
2. Ride, Rocky, Ride. Very cute one.
3. I Thought I Saw a Lion.
4. A Calf named Boo. My 2 year old great-granddaughter walks around the house carrying it and recites some of it as she walks. She's so cute. And that makes me feel so lucky.

I have six that I'm working on right now. They are going to be so dang cute. Has anyone else written children books? Mine usually rhyme. My grandkids always loved that part.
